Day 2!

Today was our second day of eating out of the pantry and freezer.  For lunch we took leftovers from last night's yummy dinner, which were just as good as when we ate them last night!  Tonight for dinner I made BBQ Chicken Breasts on the grill, sweet potatoes and corn.  It was delicious.  Don't really have a recipe for the chicken, I just sprinkled with Lawry's Seasoned Salt and some ground pepper, grilled for about 6-7 mins per side until the temp was 165 degrees, basted with SWEET BABY RAY's BBQ Sauce (this is my new favorite sauce) and served.  Really good and quick! 

Tomorrow I might have to make my first quick stop at the grocery store - we are having pita pizzas and I need to pick up a few pizza toppings.

Day 1 - June 1st!

Today is Day 1 of our challenge, and actually, we just decided to try this while we were cooking dinner!  I say that we will spend no more than $50 per week on groceries - this includes the $25 weekly that we pay a CSA to deliver milk, eggs and some produce.  My goal is to keep my weekly grocery trips under $25 this month and only buy what we ABSOLUTELY have to have - NO MEAT (we have a freezer full) and if we have it in the pantry, I'm not buying it!  This should cut our grocery budget by about $300 for this month.  Since I am a coupon user, I hope to be able to stay in that budget by shopping wisely and finding coupons for the things we need.  We'll see how we do - my pantry is fairly well stocked, so I'm not super worried.  But, we have got to get some of that meat out of our freezer.  After our refridgerator had issues earlier this month, I've had nightmares that my freezer will die and I'll lose the hundreds of dollars of meat I have in there! 

So, I thought this would also be a good place to post what I'm cooking every night for dinner and maybe help give others some good dinner ideas, because let's face it, we all could use some new dinner ideas now and then.

On the menu for tonight:
Baked Penne (recipe from www.e-mealz.com below)
Steamfresh Green Beans
Pillsbury Bread Sticks

Baked Penne
1/2 lb. penne pasta, cooked and drained
1 1/2 C. Tomato Basil Pasta Sauce
1/2 C. Part Skim Ricotta Cheese
1/2 C. shredded Part Skim Mozzarella Cheese
Mix pasta sauce and ricotta until smooth.  Then combine with pasta.  Spread into an 8x8 baking dish and bake for 15 min @ 350 degrees.  Sprinkle the cheese on top and cook 5 more mins.  Makes 4 servings.
